Roquefort Caves

The collapse of the northern section of the Combalou mountain created an underground maze of caverns which maintain a constant humidity and temperature, and create the perfect conditions for maturing Roquefort cheese. After manufacture on farms, the cheeses are stacked up before being wrapped for a second phase of maturation. The whole process (minmum 3 months) is carefully monitored by master cheesesmakers.
