To find out more about agricultural rum, visit the Depaz Distillery. This sugarcane plantation has been masterfully taken over by Victor Depaz, whose entire family died during the volcanic eruption of 1902. Tours are free of charge and can be taken with or without a guide (there are information panels). It is particularly interesting to come during the cane-cutting season, from February to June, when the machines are operated. Don't miss the reconstruction of the animal-powered mill, which now houses a very good restaurant.
