The Essential
Tarbes, capital of the historical Bigorre, has been renowned for its horses since the 19C. The so-called tarbais, housed in the national stud here, were much appreciated by the hussar regiments that have been based in the town since 1963. The other star of this city is of course its bean, the haricot tarbais: it features in the recipe for cassoulet and production underwent a renaissance in the 1980s. This dynamic city is the birthplace of both the writer Théophile Gautier (1811) - author of Le Capitaine Fracasse - and Maréchal Foch (1851).
